Step 1

Boil potatoes in salted water for 15 minutes or until knife-tender; drain and cool under cold water.

Step 2

When potatoes are cool enough to handle, quarter them and toss in a mixing bowl.

Step 3

Toss potatoes with olive oil and salt and pepper to coat.

Step 4

Add remaining ingredients and mix.

Step 5

Chill before serving.

What a delicious potato salad! I love all kinds, but this one is unique. Kind of like a pasta salad but made with (my beloved) potatoes. I used Kalamatas for the olives. We will definitely will be making this again!

Very good we loved this salad I only made one change and used cooked bacon instead of salami, I have requests to make it again for this weekend.
