Step by Step Method
Step 1
Boil potatoes in salted water for 15 minutes or until knife-tender; drain and cool under cold water.
Step 2
When potatoes are cool enough to handle, quarter them and toss in a mixing bowl.
Step 3
Toss potatoes with olive oil and salt and pepper to coat.
Step 4
Add remaining ingredients and mix.
