  • 1 1/2 pounds potatoes (white new potatoes)
  • 2 tablespoons olive oil (extra virgin olive oil)
  • Salt and pepper to taste
  • 2 cloves garlic, chopped
  • 1 cup chopped sweet bell pepper
  • 1/2 cup minced hard salami
  • 1/2 cup pitted black olives, sliced
  • 1/2 cup chopped scallions
  • 2 tablespoons chopped Italian parsley
  • 1/4 cup chopped fresh basil
  • 3 tablespoons white balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Splenda (or sugar)

How to Make

  • Step 1: Boil potatoes in salted water for 15 minutes or until knife-tender; drain and cool under cold water.

  • Step 4: Add remaining ingredients and mix.
