"Easy to prepare, quick, and healthy. Now, these are my favorite toppings; but you can use any of your favorites. Perfect for lunch, or cut in wedges to go with a bowl of soup for a light dinner; or for appetizers for a game/card night or get together with friends. Depending on how much of each topping you add to each pita, this will make 4-6 pitas."

Step by Step Method

Step 1

Pitas ... Brush each pita with a little olive oil on both sides. Season one side with salt and pepper. Toast in a 400 degree oven until lightly golden brown - 5-7 minutes.

Step 2

Top ... Spread the hummus over each pita on the side you seasoned with salt and pepper; then Italian seasoning. Finish by adding your favorite toppings. I like to start with the spinach, then olives, tomatoes, and finish with the cheese. But NOTE -- you can add any of your favorite toppings.

Step 3

If you add other toppings such as; onions, mushrooms, peppers, zucchini, or artichokes, etc., I pan saute them first so they are pre-cooked before adding to the pizza. The pizzas are only cooked a few minutes so just have everything ready.

Step 4

Bake ... Return the pitas to the oven and bake another 5-8 minutes to heat everything through, and soften the cheese.

Step 5

Finish ... This is really what makes this pizza. Mix the balsamic vinegar and olive oil together and simply drizzle over the top after it comes out of the oven when it is still warm. The perfect finishing touch. These as I mentioned make a fantastic lunch, appetizer, starter course, or even a side dish. ENJOY!

Made some changes to this, but it still came out fantastic. Used gluten free flour tortillas and crisped them for the same amount of time (without the oil) - but then did not stick them back in the oven with the toppings. We liked how the hummus made a nice "pizza sauce" base, but didn't overpower the other things, and you are right, the balsamic with the feta, tomatoes, etc. really made it delicious. We didn't add any of the additional optional toppings, but I think the artichokes would have been great with these too.
