Step by Step Method

Step 1

Preheat oven to 350f

Step 2

Whisk the egg with the dijon mustard

Step 3

Stir in the chopped onions, beef, 1/4 cup cheddar, thyme and 1/2 teasp salt

Step 4

Press mixture into an ungreased 8x4 loaf pan

Step 5

Lay a piece of foil loosely over top & set on a baking sheet with shallow sides

Step 6

Bake the meatloaf in centre of the oven for 40 minutes,

Step 7

Remove foil and drain all liquid

Step 8

Sprinkle remaining cheddar over top, increase oven heat to 450f

Step 9

Continue baling uncovered about5 minutes more until the cheese has melted

Step 10

Let the meatloaf rest for 10 minutes

Step 11

Meanwhile boil the potatoes until very tender, 12-15 minutes

Step 12

Drain the potatoes and let them sit in the pot over medium low heat for 2 minutes

Step 13

Mash the potatoes adding the milk , butter & remaining salt

Step 14

Mash until very smooth
