Ingredients

The ingredients are:
  • 1 large egg
  • 2 tablespoons Dijon mustard
  • 2 green onions, chopped (green & white parts)
  • 700 grams ground beef
  • 1/3 cup shredded cheddar cheese (white cheddar, divided)
  • 2 teaspoons thyme (fresh)
  • 3/4 teaspoon salt, divided
  • 750 grams potatoes (russet potatoes, peeled and cut into small chunks)
  • 1/2 cup whole milk
  • 3 tablespoons butter (at room temp.)

How to Make

  • Step 1: Preheat oven to 350f

  • Step 2: Whisk the egg with the dijon mustard

  • Step 3: Stir in the chopped onions, beef, 1/4 cup cheddar, thyme and 1/2 teasp salt

  • Step 4: Press mixture into an ungreased 8x4 loaf pan

  • Step 5: Lay a piece of foil loosely over top & set on a baking sheet with shallow sides

  • Step 6: Bake the meatloaf in centre of the oven for 40 minutes,

  • Step 7: Remove foil and drain all liquid

  • Step 8: Sprinkle remaining cheddar over top, increase oven heat to 450f

  • Step 9: Continue baling uncovered about5 minutes more until the cheese has melted

  • Step 10: Let the meatloaf rest for 10 minutes

  • Step 11: Meanwhile boil the potatoes until very tender, 12-15 minutes

  • Step 12: Drain the potatoes and let them sit in the pot over medium low heat for 2 minutes

  • Step 13: Mash the potatoes adding the milk , butter & remaining salt

  • Step 14: Mash until very smooth
