Step 1: Preheat oven to 350f
Step 2: Whisk the egg with the dijon mustard
Step 3: Stir in the chopped onions, beef, 1/4 cup cheddar, thyme and 1/2 teasp salt
Step 4: Press mixture into an ungreased 8x4 loaf pan
Step 5: Lay a piece of foil loosely over top & set on a baking sheet with shallow sides
Step 6: Bake the meatloaf in centre of the oven for 40 minutes,
Step 7: Remove foil and drain all liquid
Step 8: Sprinkle remaining cheddar over top, increase oven heat to 450f
Step 9: Continue baling uncovered about5 minutes more until the cheese has melted
Step 10: Let the meatloaf rest for 10 minutes
Step 11: Meanwhile boil the potatoes until very tender, 12-15 minutes
Step 12: Drain the potatoes and let them sit in the pot over medium low heat for 2 minutes
Step 13: Mash the potatoes adding the milk , butter & remaining salt
Step 14: Mash until very smooth
