"A delicious creamy mushroom sauce and meatballs served over cooked noodles, this is comfort food at it's best! I recommend only low sodium condensed mushroom soup and beef broth, 1/2 pound fresh sliced sauteed mushrooms may be replaced for canned, you may omit the garlic powder and saute 3 minced garlic cloves with the fresh mushrooms if desired, to save time the meatballs may be cooked a day ahead or well in advance, also he meatballs may be cooked/browned in the skillet instead of oven baking, remove to a plate while making the sauce then return to the skillet to finish cooking with the sauce, make certain you scrape up any browned bits from the bottom of the pan for extra flavor"

Step by Step Method

Step 1

Prepare the meatballs using your favorite recipe, then shape into about 1-inch balls.

Step 2

Place onto a greased baking sheet, then bake bottom oven rack in a preheated 350 degree F oven for 20-22 minutes.

Step 3

Or the sauce; In a large skillet combine condensed soup with Worcestershire sauce, cream cheese, Dijon mustard and garlic powder; bring to a simmer over medium heat stirring constantly until bubbly and smooth.

Step 4

Mix in 1/4 cup Parmesan cheese and canned mushrooms until combined

Step 5

Add the cooked meatballs to the skillet and stir to combine with the sauce; bring to a simmer. Season with black pepper and salt if desired.

Step 6

Reduce heat to low and simmer uncovered for about 30 minutes stirring frequently.

Step 7

Meanwhile cook the egg noodles according to package directions; drain and place into a bowl the toss with 2 tablespoons of butter to prevent sticking, cover to keep warm.

Step 8

At the end of cooking stir the sour cream into the sauce mixture and heat through (do not allow to boil).

Step 9

Place the noodles onto a large serving platter or bowl, place the sauce and meatballs on top of the noodles.

Step 10

Sprinkle the remaining 1/4 cup Parmesan cheese over the top then dust with paprika

Great idea using meatballs! The sauce came together quickly and the cheese was a great addition. Made fettuccine noodles to have it over. Delish with rolls to sop up all that gravy. One of my favs!

We had this yummy comfort food dinner tonite w/herb-garlic monkey bread & avocado wedges. I was so careful to get things right. I esp liked using the low-sodium broth & used no extra salt as Siggi is salt-restricted post kidney transplant. I used very finely minced fresh garlic & spaghetti for the pasta vs the noodles. Then I got distracted & forgot the finishing touches (Parmesan & paprika) B4 I took the pic in haste so Siggi would be ready to watch the next World Cup soccer match. Thx for this tasty meal Kitten. :-)

I couldn't resist making this and I am so glad I did, because everyone at the table was smiling with every bite they took. I got so many compliments that I was beaming all the way to the stove for another helping! Kittencal, you are a genius when it comes to knowing how to mix ingredients to create the most in flavor and I applaud you!! Loving your recipes!!
