"Easy side dish that makes a great alternative to mashed potatoes. The crème fraîche adds a slightly tangy flavor and a nice richness to the dish. And here's a time saver--if you give your parsnips a good scrub there's no need to peel them. Like many vegetables, the skin of the parsnip contains valuable nutrients."
