Ingredients

The ingredients are:
  • 1.5 pounds parsnips (washed and sliced 1/2” thick)
  • 1/2 cup crème fraîche (if creme fraiche is not readily available in your area, you can make your own per this recipe: https://www.recipezazz.com/recipe/homemade-creme-fraiche-27348 OR substitute with sour cream, but use less to taste as sour cream is more tangy than creme fraiche)
  • 2 tablespoons fresh chives, chopped
  • 4 tablespoons butter
  • Salt and freshly ground black pepper, to taste

How to Make

  • Step 1: Boil parsnips in a pot of salted water until very tender, about 15 minutes. Drain well and return parsnips to still warm pot.

  • Step 2: Add creme fraiche, butter, and chives and mash well.

  • Step 3: Taste and season with salt and pepper. Serve warm.
