Step by Step Method

Step 1

Whisk together the olive oil with balsamic vinegar and Italian season and if using the cayenne pepper and chopped garlic; add in the olives and toss to combine.

Step 2

Let stand at room temperature for 1 hour.

Step 3

Cover and refrigerate for 48 hours or more before serving (tossing a few times during chilling).

These are fabulous! I regularly buy a marinated olive blend from a local Italian market/deli, but the addition of balsamic vinegar gives these just a little extra special something even better. I found they had their best flavour after marinating for a week, stirring them daily. The only problem I had was the olive oil thickening in the refrigerator, but leaving them on the counter for an hour or so took care of that. "Optional" garlic also made me giggle... I used 6 cloves.
