Step by Step Method

Step 1

In a bowl whisk together the dry ingredients (flour - salt).

Step 2

In another bowl whisk together the wet ingredients (buttermilk - egg). Add the wet mixture to the dry mixture; whisking until combined.

Step 3

Brush skillet with vegetable oil heating it over medium heat. Working in batches add batter to skillet in 1/4 cupfuls. Cook until bubbles appear on surface and undersides are golden brown (2 minutes or so); flip and cook other side (another 2 minutes) or until pancakes are golden on the bottom. Repeat until all the batter is used up - brushing with more oil before adding new batch to skillet. Transfer to plate and serve with maple syrup.

These were light and airy but at the same time they were hearty enough to carry us through the day! Love all the ingredients in these pancakes. Only added half the salt. Will be made again for sure! Thanks for sharing Ellie! Made for Billboard Recipe Tag.
