Step 1: In a bowl whisk together the dry ingredients (flour - salt).
Step 2: In another bowl whisk together the wet ingredients (buttermilk - egg). Add the wet mixture to the dry mixture; whisking until combined.
Step 3: Brush skillet with vegetable oil heating it over medium heat. Working in batches add batter to skillet in 1/4 cupfuls. Cook until bubbles appear on surface and undersides are golden brown (2 minutes or so); flip and cook other side (another 2 minutes) or until pancakes are golden on the bottom. Repeat until all the batter is used up - brushing with more oil before adding new batch to skillet. Transfer to plate and serve with maple syrup.
