"From Riana Mahe. Adapted from Sam Choy's Polynesian Kitchen. As a substitute for a deep pot, this will sometimes be baked in a large coffee can, using foil as a lid. Prep time includes rising time."

Step by Step Method
Step 1
Combine yeast, water and sugar in a large mixing bowl.
Step 2
Add all the flour at once.
Step 3
Mix well.
Step 4
Knead a few minutes until smooth and elastic.
Step 5
Grease a deep pot with a lid.
Step 6
Place dough in pot and cover.
Step 7
Let rise for 1 hour, or until doubled in size.
Step 8
Preheat oven to 350°F.
Step 9
Bake, covered, for 45 minutes.
Step 10
Remove lid and bake an additional 15 minutes.
Step 11
Remove from oven and take bread out of pot.
Step 12
Serve hot with honey-citrus butter.
