"This recipe comes from a show I watched many years ago "The Cook and the Chef". I love Maggie Beers recipes, she is a lovely lady who has the best recipes. I wrote this down to make ears ago, and have never really gotten around to it. Hoping to do so soon. Notes: Many of Maggies recipes call for verjuice which she has her own brand of, so here is an explanation of verjuice ~ Because it is made from grapes, the best substitute for verjuice is white wine vinegar. This can be used as 1:1 substitute for verjuice. Lemon juice is another good substitute for verjuice, just reduce the quantity by half when substituting as lemon juice has a stronger flavor."

Step by Step Method

Step 1

To make poaching Apples; Poach the apples until cooked & retain any poaching liquid for later.

Step 2

Place the poached apples in a buttered dish – approx. size 20cm - ready for batter mixture.

Step 3

To make cake mixture; Preheat the oven 180C and in a bowl beat 3 egg yolks with half the sugar until mixture is pale.

Step 4

In a separate bowl whisk the 3 egg whites and the remaining sugar until they form soft peaks.

Step 5

Back to the egg yolks bowl & sift in flour and baking powder. Add 60 milliliters of the cooled poaching liquid and 60 milliliters of extra virgin olive oil.

Step 6

Slowly fold in the whisked egg whites (1/3 at a time) until all is combined.

Step 7

Pour the combined mixture over the apples that have already been placed in buttered dish.

Step 8

Bake in 180C oven for 20-25 minutes.

Step 9

It rises a little like a souffle and falls back again.

Step 10

Serve directly from baking dish.

Step 11

Dust with icing sugar (optional).
