Step 1: To make poaching Apples; Poach the apples until cooked & retain any poaching liquid for later.
Step 2: Place the poached apples in a buttered dish – approx. size 20cm - ready for batter mixture.
Step 3: To make cake mixture; Preheat the oven 180C and in a bowl beat 3 egg yolks with half the sugar until mixture is pale.
Step 4: In a separate bowl whisk the 3 egg whites and the remaining sugar until they form soft peaks.
Step 5: Back to the egg yolks bowl & sift in flour and baking powder. Add 60 milliliters of the cooled poaching liquid and 60 milliliters of extra virgin olive oil.
Step 6: Slowly fold in the whisked egg whites (1/3 at a time) until all is combined.
Step 7: Pour the combined mixture over the apples that have already been placed in buttered dish.
Step 8: Bake in 180C oven for 20-25 minutes.
Step 9: It rises a little like a souffle and falls back again.
Step 10: Serve directly from baking dish.
Step 11: Dust with icing sugar (optional).
