Step 1

Boil whole potatoes 20 minutes until tender. Drain

Step 2

Peel skin. Chop

Step 3

Add pickles and shallots; cool

Step 4

In blender, combine the herbs ,lemon juice, mayonnaise and mustard. Blend

Step 5

Fold this into potato mixture

According to DH, this is the best cold potato salad he's ever had! I loved it, too! I had some imported German gherkins from Aldi's that added just the right European flavor and texture. The chervil at the store was already turning yellow, wilted and very expensive, so I just used a some thyme from my herb garden. Plus the other green herbs in the recipe! Splashed in a little Salata (German flavored vinegar) to serve, as it was a little dry the next day. Going into my Favorites list! made for SWT2019

It is no secret that we are a family that loves potato salad, while we have a family favorite we also love to try new variations. I have no idea how I missed Luexembourg Green Potato Salad all these years, my family and friends have been hearing just how much we enjoyed it! I made using about 6 cups of freshly dug Norlands and had all herbs growing in my herb bed. I didn't have pickles on hand so added some relish. All in all super good and on for the September long weekend.
