  • 4 pounds red potatoes
  • 1/2 cup gerkin pickles (chopped)
  • 2 shallots, minced
  • 1/4 cup parsley (fresh)
  • 2 tablespoons chevil (fresh)
  • 1 tablespoon tarragon (fresh)
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard (grainy)

  • Step 1: Boil whole potatoes 20 minutes until tender. Drain

  • Step 2: Peel skin. Chop

  • Step 3: Add pickles and shallots; cool

  • Step 4: In blender, combine the herbs ,lemon juice, mayonnaise and mustard. Blend

  • Step 5: Fold this into potato mixture
