"These were a favourite of my children when they were young...and they still ask for them when they come to visit. I originally got this recipe from Shirley whom I worked with at the hospital, and that was about 30 years ago. This recipe can be halved successfully."

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Spray a 9 x 13 pan and set aside.

Step 3

Crust: Combine flour, salt and icing sugar in medium bowl.

Step 4

Cut in margarine until crumbly and the fat/flour balls are the size of peas.

Step 5

Press into prepared pan and bake for 15 minutes.

Step 6

Filling: Combine all ingredients for filling and pour over hot crust and bake for 25 minutes.

Step 7

When bar is completely cool, sprinkle with icing sugar (through a fine sieve).

Very good lemon bars -- I didn't measure the lemon juice but used 6 lemons in making this which I think is close to the required amount of lemon juice. I did need to cook it a few extra minutes but that could have been that I used extra lemon juice. Thanks for sharing!

O.M.G! The name says it all. These scrumptious morsels certainly are luscious. Pleasingly tangy and yet subtly sweet all at the same time. These are so easy to make, with such a delicious outcome. Everything needed was on hand, so no going out to shop which was an added bonus. You can't go wrong with these!

The title says it all...LUSCIOUS! We loved these and it's so very easy to put together. Totally forgot to sprinkle confectioners sugar over the top, but it was sweet and delicious enough.:) These bars brought back so many memories. Lemon bars were one of the first deserts that I made as a teen and I too used to make these all the time. Now I'm on a quest to find the old recipe. I believe it's very similar to this one. LOVE, LOVE, LOVE this recipe. Thank you Luvcookn for sharing. Made it for Billboard Tag.

Another Luv winner! These lush and lovely Lemon Bars reminded me of the ones my mom used to make. You just can't beat the taste of the old fashioned recipes. Made as posted, the end result was perfect looking lemon bars that tasted as good as they looked - a winner!

Super Yum!!! Lemon bars are one of my favorite desserts, and this is a great recipe for them! I hardly ever use margarine, so opted for half butter/half coconut oil in the crust, and 3/4 cup icing sugar for a very lovely result...The texture was amazing, and the light coconut flavor was lovely with the lemon. The lemon filling set up just right, and I was able to cut it into squares with no problem. This was also very lemony and not eggy, which is what makes it a winner for me! Even my Hubby who isn't a lemon lover said these were pretty good for 'lemon' LOL. Made for the Billboard recipe tag game.

Yum yum yum! These tasted amazing, I liked that the crust wasn't overly sweet. I would add another tablespoon or two of flour into the topping as mine cracked after it cooled and didn't look very pretty, could also try cooling slower to see if that might help. We couldn't stop eating these!
