Step by Step Method

Step 1

Cook pasta in boiling water according to package directions; drain.

Step 2

In a skillet over medium high heat melt the butter and then add the shrimp; sprinkle with salt and pepper and basil. Saute for 2 minutes or until pink; using a slotted spoon transfer to a medium bowl.

Step 3

Add onions, green pepper and garlic to skillet and saute another minute. Stir in sherry (or wine) and lemon peel; boil until reduced -- only a few minutes. Stir in clam juice and cream; boil until sauce thickens (8-10 minutes). Return shrimp and juices to skillet. Add pasta; toss and season with salt and pepper and basil (if using fresh basil).

Wow! Is this tasty...I cut the recipe in half and used 4 oz of pasta...it made a really nice portion for dinner...I used the sherry and I believe it really enhanced the overall flavor of the dish...instead of grating the lemon rind I just zested it... I got the water boiling before I started cooking the shrimp dish...I put the pasta in to cook just prior to adding the clam juice and cream to the skillet...it all came together perfectly...made for Bill Board tag game...

Loved it. The shrimp took about 2 minutes to cook through. If you overcook them they will be tough. Loved the combination of flavors and it will be made again! Dinner was on the table in less than 30 mins.

Quick easy and delicious so quick the shrimp were cooked before the pasta and that took 10 minutes actually it took longer to get the water for the pasta up to boiling than to make this delicious dish. Thank you ellie for a delicious dinner, made for Pick Me tag game.
