Step by Step Method

Step 1

Cut the butternut squash in half horizontally. Clean out all the seeds. (I use a spoon to scrape the seeds out).

Step 2

Place 1 side of the squash in a baking dish big enough to hold it. Add water into the hole in one side of the squash, then cover with plastic wrap.

Step 3

Bake for 12-15 minutes on high heat. Start checking after 12 minutes. My microwave is 1200 Watts, so if yours is less, you may have to cook it longer. It is done when the fork inserts easily into the middle.

Step 4

When done, remove the plastic wrap and drain the water form the hole in the squash. Using a large spoon, scoop the squash out into a large aluminum bowl or pot.

Step 5

Using a potato masher, mash the squash until all the lumps disappear.

Step 6

Cover the aluminum bowl/pot with a cover or aluminum foil, and place on the back burner of the stove to keep the squash warm while you are making the second half of the squash.

Step 7

Repeat the directions with the other half of the squash.

Step 8

Add the second portion of squash in with the first, and mash together.

Step 9

Add butter, brown sugar, and salt and pepper to taste. Mix well with the potato masher.

Step 10

Cover the aluminum bowl/pan with cover or aluminum foil, and place on the back burner so they will stay hot, until it is time to serve.

Step 11

When ready to serve, place in a serving bowl (I use an aluminum bowl for my veggies and stuffing, as they hold the heat better and keep the food warm longer).

Well, I did everything wrong with the right ingredients and everything came out great. I actually put all the sugar, salt ,pepper, butter and water on each half of the butternut. Each half was done in 13 minutes. Mixed both halves together and had to add a little more brown sugar. Out new go to recipe for butter squash.

I have actually used this recipe a few times over the past year. But of course, when time is a crunch, as it was this Thanksgiving, this microwave squash recipe was quick, easy, and super delicious!

I absolutely hate peeling any kind of squash so now I use this way of making my butternut squash and I couldn't be happier. Mine came out wonderfully and was soft and easy to remove from the skin with a spoon. No other way to do it for me!

I am happy I stumbled on this because I had no clue how to cook a squash and this worked so well and my squash was so soft and delicious made like this. I will make this for sure for Thanksgiving and I will probably be a pro at it too because I love squash so much and this way is so easy and fast!

I am absolutely thrilled to have made this to see first hand how easy it is to have fresh butternut squash on a moments notice. I LOVED that I didn't have to peel the squash. It saves so much time and energy. I also LOVED that I didn't have to heat up the house any more than necessary because the microwave doesn't throw off heat like the stove top and oven do. It was soft and mashed easily in 12 minutes so the time was right on target for my microwave. I imagine it might be a little longer with a smaller microwave, so think about that if you have a smaller one, and allow a little extra time. This will be the way I prepare my squash from now on, and especially during the holidays when I want to free up burner space for other things!
