Step by Step Method

Step 1

Combine the strawberries, sugar and limoncello in a medium bowl and let macerate for 30 minutes, stirring occasionally.

Step 2

Combine the mascarpone, vanilla bean seeds and heavy cream in a large bowl and whisk until light and fluffy.

Step 3

Divide the cream among 4 bowls or goblets, top with some of the berries and the juices and sprinkle with pistachios. Garnish with mint sprigs and serve.

Decadently good! The fluffy mascarpone cream, the boozy strawberries. Wowzers - it's a flavor explosion! Before I go further, I have to apologize because I forgot to top with the pistachios, and I thought I had mint (but didn't!). So I used a sprig of rosemary for garnish. Although the mascarpone part was amazing, it was so, so rich. The limoncello strawberries shine on their own, and I think we'll be making those often. They're great alone, but I bet they would be wonderful over ice cream, or as the topping for shortcake. Thank you for an all-around great recipe!
