Step by Step Method
Step 1
Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins.
Step 2
Add the olive oil, stirring as the spice sizzles in the pan.

Add the onions, apple, garlic, and ginger

Season to taste, then gently cook for 5 mins, stirring every so often.
Step 5
Add the sweet potatoes.
Step 6
Add the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins.
Step 7
Adding water as needed
Step 8
Blend until smooth using a stick blender.
Step 9
Stir in the lime juice, check the seasoning and serve, topped with cilantro leaves.
