Ingredients

The ingredients are:
  • 2 teaspoons medium curry powder
  • 3 tablespoons olive oil
  • 2 cups onions, grated
  • 1 apple, peeled, cored, grated
  • 3 garlic cloves, crushed
  • 2 tablespoons fresh cilantro, minced
  • 1 tablespoon fresh root ginger, grated
  • 2 pounds sweet potatoes, peeled, grated
  • 4 cups vegetable stock
  • 7 ounces dry red lentils,(1 cup)
  • 1 can (14 ounces) coconut milk
  • 1 lime, juice

How to Make

  • Step 1: Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins.

  • Step 2: Add the olive oil, stirring as the spice sizzles in the pan.

  • Step 3: Add the onions, apple, garlic, and ginger

  • Step 4: Season to taste, then gently cook for 5 mins, stirring every so often.

  • Step 5: Add the sweet potatoes.

  • Step 6: Add the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins.

  • Step 7: Adding water as needed

  • Step 8: Blend until smooth using a stick blender.

  • Step 9: Stir in the lime juice, check the seasoning and serve, topped with cilantro leaves.
