"Being a single guy and not much of a baker I was happy to find this great easy recipe, finding a lemon cake mix may be quite of a challenge it took me a few trips to different store until I finally found one, I hope you like this recipe as much as I do "

Step by Step Method
Step 1
Heat oven to 350 F (preheat your oven for 10 minutes). Spray 2 (8x4 inch) loaf pans with cooking spray.
Step 2
Add boiling water to jelly powder (use a pyrex bowl or a heat proof bowl) stir 2 min. until completely dissolved.
Step 3
Mix cake mix, oil, zest of lemon, jelly and eggs in large bowl with mixer until blended. Pour into prepared pans.
Step 4
Bake 40 minutes or until toothpick inserted in centres comes out clean.
Step 5
Pierce loaves with large fork at 1/2 inch intervals. Mix icing sugar and juice until blended; carefully pour over loaves.
Step 6
Cool loaves in pans 30 minutes; remove from pans to wire racks. Cool completely
