Step 1: Heat oven to 350 F (preheat your oven for 10 minutes). Spray 2 (8x4 inch) loaf pans with cooking spray.
Step 2: Add boiling water to jelly powder (use a pyrex bowl or a heat proof bowl) stir 2 min. until completely dissolved.
Step 3: Mix cake mix, oil, zest of lemon, jelly and eggs in large bowl with mixer until blended. Pour into prepared pans.
Step 4: Bake 40 minutes or until toothpick inserted in centres comes out clean.
Step 5: Pierce loaves with large fork at 1/2 inch intervals. Mix icing sugar and juice until blended; carefully pour over loaves.
Step 6: Cool loaves in pans 30 minutes; remove from pans to wire racks. Cool completely
