Ingredients

The ingredients are:
  • 1 cup boiling water
  • 1 (85 gram) box Jell-O lemon gelatin
  • 1 (18 ounce) box lemon cake mix
  • 3/4 cup cooking oil
  • 1/4 cup lemon zest (zest of 2 small lemons)
  • 4 eggs
  • 1 cup icing sugar (confections' sugar)
  • 1/4 cup lemon juice

How to Make

  • Step 1: Heat oven to 350 F (preheat your oven for 10 minutes). Spray 2 (8x4 inch) loaf pans with cooking spray.

  • Step 2: Add boiling water to jelly powder (use a pyrex bowl or a heat proof bowl) stir 2 min. until completely dissolved.

  • Step 3: Mix cake mix, oil, zest of lemon, jelly and eggs in large bowl with mixer until blended. Pour into prepared pans.

  • Step 4: Bake 40 minutes or until toothpick inserted in centres comes out clean.

  • Step 5: Pierce loaves with large fork at 1/2 inch intervals. Mix icing sugar and juice until blended; carefully pour over loaves.

  • Step 6: Cool loaves in pans 30 minutes; remove from pans to wire racks. Cool completely
