Step by Step Method

Step 1

Heat the oven to 180C/160C fan/gas 4.

Step 2

Cook the potatoes in boiling salted water until tender. Drain and leave until cool enough to handle then squish them slightly using your thumb.

Step 3

Put the chicken thighs in a roasting tin big enough to fit all the ingredients in one layer. Tuck in the lemon wedges, garlic cloves, rosemary and bay leaves and pour over a good glug of olive oil. Season and toss everything together.

Step 4

Cook in the oven for about 15 minutes before adding the tomatoes and potatoes.

Step 5

Spoon over any juices. Return to the oven and continue cooking for another 15 minutes or so until the potatoes are golden brown, the tomatoes have burst and the chicken is tender.

Step 6

Allow to rest for 5 minutes then serve straight from the roasting tin, drizzling the pan juices on top.

Great chicken dish which we enjoyed. I added carrots instead of tomatoes (parboiling them with the potatoes) and also used less garlic. Great meal! Thanks for sharing!

I loved this. My son hates tomatoes, so I halved the tomatoes in the recipe. Fabulous! A keeper!

I loved the chicken and how it didn't dry out in the oven. Lemon added a nice zing. I think I may have gone overboard with the fresh from the garden rosemary, it was a little overpowering. Next time I'll go easy!

Oh so good!!! This dish was super easy to put together and the presentation is beautiful! Comfort food at it's best. The flavors of the lemon and rosemary go so well together. Add chicken and potatoes - what's not to like! Maybe the best part was the garlic... so well roasted you could squeeze every last bit out onto a piece of chicken, potato, or a piece of bread. OMG. A great weekday dish, and company-worth to boot! Thanks for sharing this great recipe!

Daily Inspiration

This dish is comfort food at its best -- loved the lemon, garlic & rosemary chicken and the potatoes/cherry tomatoes were amazing. All I had to do was throw together a nice salad and our dinner was complete. Will definitely make this dish again. Nancy : )
