Step 1

In a slow cooker place chicken breasts, chopped celery, garlic, plum tomatoes, black pepper, fresh parsley and dill, lemon zest and chicken broth and cook on high for 5 hours or low for 8 hours.

Step 2

Add shredded zucchini, green onion and orzo pasta and cook for one additional hour ON HIGH.

Step 3

Remove chicken breast from slow cooker and shred.

Step 4

Place the shredded chicken back in the slow cooker, add in lemon juice, stir, and ladle into soup bowls and enjoy.

Step 5

Would suggest to have it with crusty bread if desired.

No special items needed.



Wonderful soup! I did make some changes based on what I had on hand. Instead of the celery I added a good sized sprinkling of celery seed, used a small can of tomatoes instead of fresh, and a good sprinkling of dried dill weed instead of fresh. Even with my substitutions this soup is a winner! Next time I will try to have all the correct ingredients on hand! Thanks for sharing!

Very nice soup, I used 1 tsp garlic powder cause I ran out of fresh garlic, when I make it again I will brown ground chicken or turkey first then add to the slowcooker instead of the whole raw chicken breast, I found it to be a little dry with all those hours of cooking time, the flavor was fantastic, we loved it!
