"Love Lemon Butter, when baking for me it’s a must make for both my mini tartlets and lemon tarts. It’s great for spreading between layer cakes, makes a lovely lemony filling for jelly rolls, great on cookies, scones or toast. Makes 2 cups"

Step 1

In a saucepan over medium heat add lemon juice, zest, butter and sugar bring to a low boil and stir

Step 2

Stir part of the hot mixture to the eggs to temper, whisking well

Step 3

Add tempered mixture back into the pan, cooking and stirring until thick ened

Step 4

Place in 2 clean jars, when cool add lid and refrigerate.
