Lemon & Basil Marinated Grilled Shrimp Skewers

Step 1

Combine all marinade ingredients in a small bowl.

Step 2

Place shrimp in a large, heavy-duty resealable plastic bag.

Step 3

Pour marinade over shrimp and seal bag.

Step 4

Turn bag several times to coat shrimp with marinade.

Step 5

Marinate in refrigerator for 1 hour.

Step 6

Preheat grill to high setting.

Step 7

Thread shrimp onto skewers (5-6 per skewer, depending on size of shrimp).

Step 8

Discard marinade.

Step 9

Brush grill rack lightly with oil.

Step 10

Grill shrimp for about 2 minutes per side, just until shrimp turns pink and no gray remains.

Step 11

Be careful not to over cook shrimp or they will be rubbery.

Step 12

Just stand there and stare at them the entire time they are cooking, OK?

Step 13

Serve skewers hot or cold, on a salad or with a hot rice side dish, with grilled vegetables or as an appetizer.

I set aside some of the marinade before adding the shrimp. I served the shrimp on a rice bowl with mushrooms and spinach, dressed with the remaining marinade. A delicious and flexible dish - thanks for sharing.

Bergy (RIP" Forever in our Kitchen)

Excellent marinade - The shrimp are loaded with flavour. I broiled them (I don't BBQ any more) and only for about 5 minutes each side. They were so tender they almost exploded in my mouth. I used large wild Argentine shrimp. I look forward to the next time I'll be making this recipe

I cut this down to 1 serving and had it as a lunch. The shrimp were done just perfect and they tasted great! I love anything with lemon, except desserts! Thank you for sharing it here Luv! Linda

We loved these...I made them as an appetizer...they do cook up quick...mine were a bit over done...but the hubby thought they were perfect...I cut this down to 2 servings...I served them cold...I can see making a huge batch for a backyard get together...made for "Bill Board" tag game...

These are great tasting skewers I really enjoyed, lovely combination of flavors! I made half the recipe as this was for just me and broiled them instead of grilling them. I had two skewers with rice and the other 2 skewers were tossed in a spinach salad to bring to work for lunch. These will be made often here.
