"I'm sure I must have copied this from somewhere, as it was scribbled on the back of an electric bill from 2003, but I have no earthly idea where. It makes a nice change from a regular side dish or salad, and works well in summer."

Step by Step Method
Step 1
Steam green beans for 5-7 minutes, until crisp-tender. Immediately plunge into ice water to prevent further cooking and then drain well.
Step 2
Mix garlic, salt and oil together to form a paste; mix into yogurt.
Step 3
Add parsley, mint and pepper; stir well to combine.
Step 4
Stir green beans into dressing; cover and refrigerate at least one hour to allow flavours to blend.
