Step 1: Steam green beans for 5-7 minutes, until crisp-tender. Immediately plunge into ice water to prevent further cooking and then drain well.
Step 2: Mix garlic, salt and oil together to form a paste; mix into yogurt.
Step 3: Add parsley, mint and pepper; stir well to combine.
Step 4: Stir green beans into dressing; cover and refrigerate at least one hour to allow flavours to blend.
