"My husband is on a potassium- restricted diet and he loves potatoes. Although we cannot have them very often, we can have them once in a while by leaching them first. It will bring the potassium for a 2/3 cup portion from 420 mg. down to less than 200 mg."

Step 1
Slice potato thinly, cut into small cubes or shred.
Step 2
Place in saucepan with cold water. Bring just to a boil.
Step 3
Strain and place back in saucepan with fresh hot water. Bring to a boil again and reduce heat. Cook till potatoes are just tender. Strain again.
Step 4
You can either mash them or fry them in a skillet to crisp them up. Season to taste.
