  • 2 quarts water, cold
  • 2 quarts water, hot (for second boiling)

How to Make

  • Step 1: Slice potato thinly, cut into small cubes or shred.

  • Step 2: Place in saucepan with cold water. Bring just to a boil.

  • Step 3: Strain and place back in saucepan with fresh hot water. Bring to a boil again and reduce heat. Cook till potatoes are just tender. Strain again.

  • Step 4: You can either mash them or fry them in a skillet to crisp them up. Season to taste.
