"A meatloaf fit for a king! You could omit the stuffing and just make the meatloaf alone but I can tell you it won't be as good! For some heat add some crushed chili flakes to the beef/pork mixture or hot sauce whichever you like. NOTE: If your using the stuffing mixture and a regular 9x5 pan, your pan will be very full, make sure that you place a baking sheet under your 9x5 pan to catch an spills while cooking, I purchased a pan on the net that is a little larger than 9x5 and has very high sides, it's perfect to make this recipe with the stuffing option"

Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Prepare a 9 x 5-inch loaf pan, also a baking sheet covered with foil to place underneath to catch any drippings (if you are using the stuffing your pan will be VERY FULL!).

TO MAKE THE STUFFING MIXTURE - this is only optional


Step 3

For stuffing mixture (this is only optional) Melt butter in a skillet over medium heat. Add in mushrooms, onion and thyme, cook stirring until the mushrooms brown and loose their moisture. Add in the soft breadcrumbs and cook until lightly browned. Season with salt and pepper.

TO ASSEMBLE & BAKE


Step 4

Spread the prepared stuffing mixture evenly onto the bottom of the pan, then prepare the beef mixture.

Step 5

Using clean hands, in a large bowl mix together all meatloaf ingredients together until well combined (adding in a little more breadcrumbs if needed). Pack the beef mixture on top of the stuffing mixture.

Step 6

Place the pan on a foil-lined baking sheet to catch any spills.

Step 7

Bake for about 1 hour.

Step 8

While the meatloaf is baking, prepare the topping ingredients, in a small bowl, combine the 2 topping ingredients together adjusting the brown sugar to taste (start with 2 tablespoons adding in as much brown sugar as you desire to reach desired sweetness).

Step 9

After the 1 hour of baking time, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the ketchup/brown sugar mixture over the top.

Step 10

Place back in the oven and bake for another 15-20 minutes, or until the meat loaf is pulling away from the sides of the pan. Enjoy!

Another great recipe by Kittencal. I just made the meatloaf without stuffing. I tweaked the sauce a little by using only one tbsp of brown sugar and adding a tbsp of Worcestershire. I used gluten free bread crumbs in the meat loaf. It turned out amazing and delicious. This will be my go to meat loaf recipe.

I used ketchup and tomato sauce and no chili sauce, and used brown sugar twin in place of brown sugar to cut down on the sugar. I used dried whole grain bread for the bread crumbs for good carbs, I used Fat Free half and half in place of milk and eggbeaters in place of the eggs. All turned out well and it was really delicious!
