Ingredients

The ingredients are:
  • FOR THE MEAT MIXTURE
  • 2 pounds lean ground beef
  • 1/2 pound ground pork
  • 1 medium yellow onion, finely chopped
  • 6 garlic cloves, minced (or use 1-1/2 teaspoons garlic powder)
  • 1/2 cup chili sauce (use Heinz mild, or can use 1/4 cup of each 1/2 ketchup and chili sauce)
  • 1/2 cup dry breadcrumbs (seasoned - more if needed)
  • 1/4 cup milk
  • 2 large eggs (slightly beaten)
  • 3 tablespoons Worcestershire sauce (another tablespoon won’t hurt!)
  • 1/2 to 1 teaspoon dried oregano (rubbed)
  • 1 to 2 teaspoons dried basil (rubbed)
  • 2 teaspoons seasoning salt ( can use white salt)
  • 1 teaspoon fresh ground black pepper (or to taste)
  • FOR THE STUFFING
  • 2 tablespoons butter (or as desired)
  • 1/2 pound fresh mushrooms (sliced)
  • 1 medium yellow onion, chopped
  • 1 teaspoon dried thyme (rubbed between fingers to release the oils)
  • 2 cups fresh breadcrumbs
  • 2 tablespoons fresh parsley
  • 1/2 teaspoon seasoned salt (or to taste)
  • Fresh ground black pepper (or to taste)
  • FOR THE TOPPING - can double is desired
  • 3/4 cup ketchup
  • 2 tablespoons brown sugar (start with 2 tablespoons and add in more to taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Prepare a 9 x 5-inch loaf pan, also a baking sheet covered with foil to place underneath to catch any drippings (if you are using the stuffing your pan will be VERY FULL!).

  • TO MAKE THE STUFFING MIXTURE - this is only optional

  • Step 3: For stuffing mixture (this is only optional) Melt butter in a skillet over medium heat. Add in mushrooms, onion and thyme, cook stirring until the mushrooms brown and loose their moisture. Add in the soft breadcrumbs and cook until lightly browned. Season with salt and pepper.

  • TO ASSEMBLE & BAKE

  • Step 4: Spread the prepared stuffing mixture evenly onto the bottom of the pan, then prepare the beef mixture.

  • Step 5: Using clean hands, in a large bowl mix together all meatloaf ingredients together until well combined (adding in a little more breadcrumbs if needed). Pack the beef mixture on top of the stuffing mixture.

  • Step 6: Place the pan on a foil-lined baking sheet to catch any spills.

  • Step 7: Bake for about 1 hour.

  • Step 8: While the meatloaf is baking, prepare the topping ingredients, in a small bowl, combine the 2 topping ingredients together adjusting the brown sugar to taste (start with 2 tablespoons adding in as much brown sugar as you desire to reach desired sweetness).

  • Step 9: After the 1 hour of baking time, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the ketchup/brown sugar mixture over the top.

  • Step 10: Place back in the oven and bake for another 15-20 minutes, or until the meat loaf is pulling away from the sides of the pan. Enjoy!
