Step 1: Preheat oven to 350 degrees F.
Step 2: Prepare a 9 x 5-inch loaf pan, also a baking sheet covered with foil to place underneath to catch any drippings (if you are using the stuffing your pan will be VERY FULL!).
Step 3: For stuffing mixture (this is only optional) Melt butter in a skillet over medium heat. Add in mushrooms, onion and thyme, cook stirring until the mushrooms brown and loose their moisture. Add in the soft breadcrumbs and cook until lightly browned. Season with salt and pepper.
Step 4: Spread the prepared stuffing mixture evenly onto the bottom of the pan, then prepare the beef mixture.
Step 5: Using clean hands, in a large bowl mix together all meatloaf ingredients together until well combined (adding in a little more breadcrumbs if needed). Pack the beef mixture on top of the stuffing mixture.
Step 6: Place the pan on a foil-lined baking sheet to catch any spills.
Step 7: Bake for about 1 hour.
Step 8: While the meatloaf is baking, prepare the topping ingredients, in a small bowl, combine the 2 topping ingredients together adjusting the brown sugar to taste (start with 2 tablespoons adding in as much brown sugar as you desire to reach desired sweetness).
Step 9: After the 1 hour of baking time, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the ketchup/brown sugar mixture over the top.
Step 10: Place back in the oven and bake for another 15-20 minutes, or until the meat loaf is pulling away from the sides of the pan. Enjoy!
