Step by Step Method
Step 1
In a 5-quart pot cook the sausage with onion in olive oil over medium-high heat until browned (use as much oil as desired, about 12-15 minutes). Add in garlic black pepper, Italian seasoning and oregano; cook for 2 minutes.
Step 2
Add in tomato sauce, water, tomato paste; bring to a simmer stirring constantly; reduce heat to low and simmer partially covered for about 2 hours, seasoning with salt about halfway through cooking (if sauce gets to thick add in a little water and continue simmering).
Step 3
Use right away or cool and refrigerate until ready to use (I highly recommend making this sauce 1 day or 2 days ahead to blend the flavors which is what I do with all my homemade tomato sauces).
