Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage meat (spicy or mild - if using sausage links remove casings then crumbled or bulk Italian sausage meat)
  • Olive oil (as desired)
  • 1 onion, chopped (medium or large onion)
  • 4 garlic cloves, large, minced (about 2 heaping tablespoons)
  • 1 teaspoon fresh ground black pepper
  • 2 teaspoons dried Italian seasoning
  • 2 teaspoons dried oregano
  • 42 ounces tomato sauce (3 cans, 14 ounce each, must be Hunt's brand tomato sauce or a high quality tomato sauce)
  • 1 1/2 cups water
  • 24 ounces tomato paste (2 cans, 12 ounces each Hunt's brand or a high quality tomato paste)
  • Salt, to taste

How to Make

  • Step 1: In a 5-quart pot cook the sausage with onion in olive oil over medium-high heat until browned (use as much oil as desired, about 12-15 minutes). Add in garlic black pepper, Italian seasoning and oregano; cook for 2 minutes.

  • Step 2: Add in tomato sauce, water, tomato paste; bring to a simmer stirring constantly; reduce heat to low and simmer partially covered for about 2 hours, seasoning with salt about halfway through cooking (if sauce gets to thick add in a little water and continue simmering).

  • Step 3: Use right away or cool and refrigerate until ready to use (I highly recommend making this sauce 1 day or 2 days ahead to blend the flavors which is what I do with all my homemade tomato sauces).
