"Your going to love these bars and it only takes minutes to make! These are great to take to work, kids lunch boxes, for a potluck or a bake sale, you can slice them and stick them in the freezer then wrap tightly in foil, put a frozen wrapped bar into your kid's lunchboxes, they will thaw out by noon, they are just as good if not better than anything store-bought! Make one 13x9 pan or two 8x8 pans which is what I do most often, then you can use two different kinds of pie fillings! NOTE: if you are using a 13x9 pan you will need two cans (same flavor) of pie filling, for the two 8x8 or 9x9 pans you will need only one can for each pan, if making the two separate pans you will need to purchase two cans of pie filling (one for each pan). Jam/preserves can be used in place of the pie filling. Servings listed are for 13x9 pan"

Step by Step Method

Step 1

Preheat oven to 350 degrees F (oven rack to second-bottom position).

Step 2

Grease one 13 x 9-inch baking dish (or can use two 8 x 8 OR 9 x 9-inch baking pans).

Step 3

In an extra-large bowl, combine the dry cake mix with oatmeal, cinnamon and brown sugar; mix with a spatula or a large wooden spoon (there is a lot of mixture so I use my hands for mixing).

Step 4

In a small bowl whisk the egg with lemon juice and vanilla until combined. Mix in the semi-cooled melted butter until well combined. Add to the crumb mixture. Using a large spoon to start, mix for about 1 minute, then change over to your hands to finish the mixing (the mixture should clump together when fully mixed).

Step 5

Sprinkle a little more than half of the crumb mixture into the pan then spread out. VERY LIGHTLY press down the mixture, if you press down hard the crust will be hard after baking.

Step 6

Spoon the pie filling (2 cans) carefully over the crust, then spread out evenly.

Step 7

Top with remaining crumb mixture, then GENTLY pat the mixture down slightly.

Step 8

Bake for about 20 minutes (this does not take long to bake! the top should be very light brown).

Step 9

Cool then slice into bars -- for easier slicing semi-freeze before slicing.
