These brownies combine a fudge brownie's ultra-moist texture with a subtle cake-like rise, for the best of both worlds. It freezes well and I love to eat it slightly thawed. Extremely delicious."

Step by Step Method

Step 1

Preheat the oven to 350°F. Lightly grease an 8 inch square pan.

Step 2

In a medium sized microwave-safe bowl or in a saucepan, melt the butter on low heat, then add the sugar and stir to combine.

Step 3

Return the mixture to the heat or microwave briefly, just until it's hot but not bubbling.

Step 4

Notes: It will become shiny looking as you stir it. Heating the butter and sugar a second time will dissolve more of the sugar, which will yield a shiny top crust on your brownies.

Step 5

Transfer the mix to a mixing bowl.

Step 6

Stir in the cocoa, salt, baking powder, and vanilla.

Step 7

Add the eggs, beating till smooth; then add the flour and chips and nuts if using.

Step 8

Beat until well combined and spoon the batter into the prepared pan.

Step 9

Bake the brownies for 28-30 minutes, until a cake tester inserted in the center comes out with just a few crumbs clinging to it.

These are absolutely delicious! I added chopped almonds and am very glad I did. Hubby and kids think they are fab too. Will make these again and again!!
