  • Make sure to use fresh buttermilk for the best results.
  • For a healthier version, use whole wheat flour instead of all-purpose flour.

  • Substitute the egg with a flax egg, which is a combination of 1 tablespoon of ground flaxseed and 3 tablespoons of water. This substitution will make the pancakes vegan and healthier, as flaxseed is high in omega-3 fatty acids.
  • Substitute the buttermilk with almond milk. This substitution will make the pancakes dairy-free, as almond milk is lactose-free.

Cinnamon and Sugar Pancakes Add 1 teaspoon of ground cinnamon and 2 tablespoons of sugar to the dry ingredients. Mix until combined. Cook as directed.

Bacon-Wrapped Asparagus Spears with Honey Mustard Glaze:

This dish is a great accompaniment to Julie's Aretha Frankenstein's Pancakes, as the salty bacon and sweet honey mustard glaze provide a perfect contrast to the savory pancakes. Plus, the asparagus provides a nice crunchy texture to the meal.

Baked Sweet Potato Fries with Garlic Aioli: These sweet potato fries are a great way to add a bit of crunch and sweetness to the meal. The garlic aioli gives the fries a creamy and flavorful finish, and the sweet potatoes provide a great contrast to the savory pancakes.

Wow! These little guys are so, so good! They are fluffy, semi-sweet, and - did I say fluffy? The biggest surprise was the great texture, thanks to the farina. Of note, though, is that the batter will be very airy and bubbly because of the amount of baking powder. You'll need to use it pretty quickly, because it deflates as it sits. I made these about 3 inches in diameter, and they are delicious! DH had the with maple syrup, and I had mine with date syrup. Both were great!
