"Found @ realsimpledotcom & actually 1 of my favorite recent finds. I like pickles on some sammies & in certain recipes, BUT not enough to be sure I always have them around. And my Siggi is definitely not a pickle-lover to say the least. So the reason I like this recipe so much is I can make it when I want a larger amount for a particular reason or halve it easily when I want to make a smaller amount just for me (or guests as a condiment, etc). Time does not include "standing" time. ENJOY!"

Step by Step Method

Step 1

Toss together cucumber slices & salt in a med-sized bowl. Allow to stand for 5 min. Then drain & rinse well.

Step 2

Add the remaining ingredients, mix well & chill in the fridge for best flavor.

YIELD: Yield is 2 cups = 16 1-ounce servings

This is such a light and refreshing salad that went perfectly with our dinner on a warm evening. Such lovely flavours, with a perfect taste of sweet and sour that together with the cucumber makes for a delicious combination of flavour. So easy to make and will be sure to make this again.

Sheepdoc

These were pretty good. Not knowing what Japanese pickles taste like, I expected them to be sourer or sweeter. Still they were tasty and not too cucumber-y.
