"They used garlic chives. I'm using regular chives here in the hinterland with some garlic powder. You need to cook garlic chives before adding them to eggs because they are bigger and tougher. lol I have included rice cause you need some rice. lol"

Step by Step Method

Step 1

Beat eggs with the soy sauce and mirin, seasoning to taste.

Step 2

Stir in chives.

Step 3

Have the hot rice divided on 2 plates, (the amount you want)

Step 4

Heat oil (you will need enough oil to make the egg "fluffy").

Step 5

When the egg is added to the hot oil, the egg immediately fluffs up. Be careful it's going to pop!

Step 6

Stir gently around.

Step 7

Divide omelet on the 2 plates.

Step 8

Put the egg 1/2 over the warm rice.
