Step by Step Method
Step 1
Beat eggs with the soy sauce and mirin, seasoning to taste.
Step 2
Stir in chives.
Step 3
Have the hot rice divided on 2 plates, (the amount you want)
Step 4
Heat oil (you will need enough oil to make the egg "fluffy").
Step 5
When the egg is added to the hot oil, the egg immediately fluffs up. Be careful it's going to pop!
Step 6
Stir gently around.
Step 7
Divide omelet on the 2 plates.
Step 8
Put the egg 1/2 over the warm rice.
