Step 1: Beat eggs with the soy sauce and mirin, seasoning to taste.
Step 2: Stir in chives.
Step 3: Have the hot rice divided on 2 plates, (the amount you want)
Step 4: Heat oil (you will need enough oil to make the egg "fluffy").
Step 5: When the egg is added to the hot oil, the egg immediately fluffs up. Be careful it's going to pop!
Step 6: Stir gently around.
Step 7: Divide omelet on the 2 plates.
Step 8: Put the egg 1/2 over the warm rice.
