Step by Step Method
Step 1
Grease an 18cm x 28cm rectangular slice pan and line base and sides with baking paper, extending paper 3cm above pan edges.
Step 2
Place flours, icing sugar and butter in a food processor and process until mixture resembles bread crumbs and with the motor operating add egg and enough water until mixture just comes together and transfer to a clean bench and knead into a ball.
Step 3
Press 2/3 of pastry over base of prepared pan and smooth with the back of a spoon and then place the apricots over the base and spread over jam and crumble remaining pastry over the top.
Step 4
Cook in a moderately hot oven (190C) for about 20 minutes or until golden and cooked and then let stand in pan for 10 minutes before transferring to a wire rack to cool.
Step 5
Cut into bars to serve, dusted with extra sifted icing sugar.
