Jalapeno Corn Muffins With Honey Butter

"These are yummy, no cheese in this one but the honey or maple butter fits perfectly here, even with the jalapeño. Recipe makes 8 muffins so for small families it wont be to much. Just double the amounts for more. From TOH"

Step 1

Preheat oven to 400°F.

Step 2

In a small bowl combine first 7 ingredients.

Step 3

In another bowl, combine the egg, sour cream, milk and oil. Stir into dry ingredients just until moistened. Stir in jalapeño and corn.

Step 4

Coat muffin cups with nonstick spray, fill 2/3s full with batter. Bake at 400°F for 14-16 minutes until tester comes out clean.

Step 5

In a small bowl combine honey and butter; serve with warm muffins.

No special items needed.



Easy and delicious! I had no jalapeño so used some red bell pepper and a shake of spicy seasoning. DH loved them, too!

These muffins were wonderful Mara. We really enjoyed them. They were quick and easy to make with terrific results. I love the flavor and texture of these lovely little treats. The honey butter is the icing on the cake, simply perfect with the muffins. This recipe made 12 tall, mini muffins. We really enjoyed the zing from the jalapeno. Thanks for sharing. YUM, YUM and yum again! These are delicious! I liked the little heat from the jalapenos and the honey butter tamed the muffins, giving them a lovely sweetness to balance out the jalapenos. Such a great muffin to have anytime. I made them to go with cabbage rolls and they were a great choice too! Thank you for sharing these with us Marramamba! Linda

Daily Inspiration

These corn muffins are really delicious. The only change (not really a change) was to add a can of Mexi-corn vs. just regular corn. They went really well with our dinner tonight. Nancy : )
