Step by Step Method

In a saucepan

Combine the wine, lemon zest, lemon juice, sugar and cinnamon sticks.

Add the pears.

Bring this mixture to a boil over high heat.

Reduce to medium and poach the pears until the tip of a knife can easily be inserted.

The time will depend on the ripeness of the pears

Poaching pears can take 15 to 45 minutes.

Test frequently to ensure that the fruit is firm yet tender.

Remove the pears to a plate

Let cool slightly, then cover with a plastic wrap and chill for at least 2 hours.

Reduce the poaching liquid until it is thickened and syrupy

Puree the raspberries in a blender until smooth.
