Step 1: In a saucepan
Step 2: Combine the wine, lemon zest, lemon juice, sugar and cinnamon sticks.
Step 3: Add the pears.
Step 4: Bring this mixture to a boil over high heat.
Step 5: Reduce to medium and poach the pears until the tip of a knife can easily be inserted.
Step 6: The time will depend on the ripeness of the pears
Step 7: Poaching pears can take 15 to 45 minutes.
Step 8: Test frequently to ensure that the fruit is firm yet tender.
Step 9: Remove the pears to a plate
Step 10: Let cool slightly, then cover with a plastic wrap and chill for at least 2 hours.
Step 11: Over high heat
Step 12: Reduce the poaching liquid until it is thickened and syrupy
Step 13: Only about 1/2 cup liquid should remain.
Step 14: Puree the raspberries in a blender until smooth.
Step 15: Strain through a fine mesh sieve to remove the seeds.
Step 16: Add the raspberry puree to the wine mixture and cook until thickened over moderately high heat, about 5 minutes.
Step 17: Transfer to a bowl and let cool to room temperature.
Step 18: Cover and chill for about 2 hours before serving.
