"This is a spicy sausage mix that can be stuffed into casings, made into patties, or just fried and crumbled for use on pizza or in other dishes. It is for one pound of ground pork (I like the pork to have about 15% fat in it) and can be multiplied as you see fit."

Step by Step Method

Step 1

Mix all dry ingredients together. Spread ground pork out in a shallow pan. Sprinkle with the spice mixture. Drizzle with water. Mix as thoroughly as possible (most important step).

Step 2

Cover and refrigerate 24 hours. Mix again. NOTE: Cook Time is Refrigeration Time.

Made up a double batch of sausage and stuffed into casings using my KitchenAide. Saved out enough for one meal and froze the rest. We had some for breakfast and we loved it. The spices really flavored it up. I will be making on a regular basis. Oh yes, I didn't use the car away seeds and added a little more fennel seeds

I made up a double batch of this sausage to make into sausage so we could have them with peppers and onions on the grill. They are flavored perfectly for us and made spectacular subs with peppers and onions. Grilling makes it better every time!

I never made my own sausage before but since making this sausage I will be making it again as soon as I run out. I doubled all the ingredients so I could have some to freeze. I will make this many more times. It is so full of flavor and we love it! Thank you Crocus!

WOW! How can one not love a spicy sausage mix that tastes this good. I was so intrigued with the ingredient list that I didn't want to wait for a city shop to pick up ground pork. Ground beef made for excellent sausage patties that we loved - no surprise as it has our favourite spices which came together to make for a wow of a sausage. Will be making it with the ground pork, with repeats of the ground beef a given. Thank you for sharing your speical recipe which has been added to our family cookbook.
